Ice cream can be distinguished composition and content. The most important component of the ice cream is milk fat and skim milk. In Britain, there are separate standards for ice cream products. The government set the ice cream products must contain 2.5 percent and 7.5 percent milk fat skrim milk (non fat milk solids). If mixed with fruit, milk fat content of 5 percent or 7.5 percent and 7.5 percent skrim content of milk or 2.0 percent. 

Based on the literature, the ice cream can be grouped into three categories based on fat content and components or non-fat milk solids skrim. namely: • the standard, 10% non-fat content and fatty component of milk solids 11%. • Premium, 15% fat content and non-fat components of milk solids 10%. • and super premium, the highest fat content, or about 17 percent and component non-fat milk solids at low or about 9.25%.
 
Ice cream can also be differentiated based on their composition, namely: • Milk ice, or ice milk is a product that has a low amount of fat or about 4 percent. • beer, has a fat content of about 2 percent. • Water ice, do not use milk and milk fat skrim but using only fruit juice and sugar and add stabilizer.

The main difference from the three kinds of ice cream lies in the fat content of milk. In addition to the three categories above, currently on the market also known low-fat ice cream, ice cream is reduced fat content per serving size.
